Homemade Flour tortilla recipe

Homemade Flour tortilla, Khamali is a staple of Hunza cuisine, and therefore, homemade flour tortilla recipe is a basic recipe for everyone learning Hunza traditional cooking. We make the homemade Flour tortilla at least 3 times a day.

Hunza Flour tortilla or Khamali has further varieties named Bagoundo, is a sourdough flatbread. Maltaschy Giyaling, which is wheat flour crepes. Baru’e Giyaling, which is buckwheat crepes, Khalounchy Giyaling, and Bischy Giyaling, which is a crepe of lard and wheat flour.

We use homemade flour tortilla to make supplementary dishes which include Chamuriki (crumbles mixed with local butter), Burus shapik/xapik, which is a vegetable Quesadilla and mulida, etc. We bake all types of bread on the stovetop with firewood.

Similarly, there are other types of bread that are baked in earthenware pots in hot ashes that include famous Hunza bread, locally known as fiti/phiti and Chapshuro. This bread has further two types – Gure fiti and makaie fiti.

Gure Fiti:
We use wheat flour to make this bread and we bake it in an earthenware pot in hot ashes and usually served cold with hot tea.

Makai Fiti:
Makai means corn in the Burushaski language of  Hunza, and we make this type of bread with cornmeal. We also bake these bread earthenware pots in hot ashes. This bread tastes best when it is served hot and we cornbread with tea at breakfast, mid-day, and in the evening.

Homemade Flour tortilla recipe

For 6 servings of a homemade flour tortilla, you need the following ingredients

Wheat Flour     3 Cups
Water                 250ml
Salt                     1tsp.
Flatbread Cooking procedure

 Directions:

  • Add three cups of wheat flour to a bowl and add a teaspoon of salt to it.
  • Mix both dry ingredients add water gradually.
  • Knead it to a soft dough.
  • Take a small portion of dough.
  • Flatten the dough to make a thin circular flatbread.
  • Cook it on the stovetop
  • Repeat the process for the number of flatbreads you need.
  • You can store the dough in an airtight box in the refrigerator but take it out 5 minutes earlier before using it.

Serving:

We eat this Homemade Flour tortilla recipe with almost every dish including rice. It goes well with soups and curries of all types. We also make this for breakfast. On special occasions/rituals we make this bread in hundreds in number serve the masses. For instance, at weddings, we serve it with a traditional dish called Sharbat and another dish called Harisa to the guests.
