Hunza Style Quesadilla

Hunza style quesadilla is a traditional dish locally famous as Burus Sapik, where Burus refers to the cheese in Burushaski language of Hunza and Sapik refers to the flour tortilla.
Burus Sapik comprises a flour tortilla, homemade low-fat cheese and herb stuff. you can make a full burus sapik with two tortillas with a layer of cheese and herb mixture between them. You can make a single serving of Hunza style quesadilla by using a single tortilla and stuffing it with cheese and herb mixture and folding it into half. Next drizzle a generous amount of any edible seed oil on the mixture. Traditionally we use apricot oil, walnut oil and almond oil. When we have none of the above oils, we then use homemade clarified butter.
For the recipe shown in demonstration video which was 3 servings I used flowing ingredients for filling
Hunza style quesadilla fillings ingredients
Low fat homemade cheese 2 cups
Chopped Cilantro ½ Cups
Mint Chopped ½ Cups
Green onions Chopped ½ Cups
Salt ¾ Tsp
Chilies finely chopped 3
Hunza style quesadilla flour tortilla ingredients
Wheat flour 3 Cups
Salt ¾ Tsp
Water 260 ml
Directions
Step 1:
We will make the cheese and herbs filling first and for this we will take a bowl, any clean bowl would work.
To a bowl add 2 cups of homemade low fat cheese and 3/4 Tsp of salt. I have used regular salt that i use in everyday cooking. Traditionally we use Himalayan pink salt. Then add chopped herbs one by one. Finely chopped 3 chilies, half cups of Cilantro, half cups of chopped mint and half cups of chopped green onions.
I then mixed all these ingredients with a spoon to make a smooth paste and set it aside till my flour tortillas are ready.
Step 2:
To a bowl add 3 cups of flour, traditionally we use wheat flour. Add 3/4 Tsp of salt, mix the dry ingredients and knead with water to make a soft dough.
Take a small portion of dough and flatten it with a rolling pin to make a circular tortilla. Bake it on stove top repeat the process until you are done with making all tortillas.
Step 3:
Take a cooked tortilla and spread a layer of cheese and herb mixture made in Step 2. Drizzle some oil, I have used apricot oil for this recipe. then place another tortilla and spread the mixture, drizzle oil and repeat the process till you are done with the last tortilla. On the top tortilla just drizzle some oil and cut the whole thing into desired pieces.
Serving:
It is a complete meal for 3 people and you can serve it right away or keep it in an air tight container in fridge and consume it the next day. It stays good in the fridge for 2 days.
