Hunza Bread

hunza breadHunza bread is considered a vital food item for breakfast in Hunza homes. It leaves one full for almost 6-8 hours. It is made with wheat flour and sometimes one portion of maize flour is added for extra flavor and texture. The Hunza bread is baked in an earthenware pan which is buried in hot ashes. It is usually baked at night and served in the morning with salty tea. This bread can be made by adding sugar as well but Hunza people do not have sweet tooth and they like more savoury food. It is nowadays baked in heavy base pan on stove top. The crust is pronounced as “what” and the inner soft part is pronounced as “s” in local Hunza language. The crispy crust is so delicious and we usually apply butter to it and eat with tea. The original Hunza bread recipe has no sugar in it and is baked without an oven.

In Hunza, we live in a joint family system and hence need to bake more than one of these bread each day. Hunza people have this bread with salty tea 3 times a day. The tea timing is fixed. Morning tea is always at 7 am followed by another tea at 10 am and then the afternoon tea is always at 4 pm.

Ingredients for Authentic Hunza Bread Recipe:

Wheat flour              4 cups
Cooking oil/butter  60ml
Milk                           300ml
Instant yeast             1tsp
Salt                             1tsp

Hunza Bread Recipe:                                                            

Directions:

    • First, add the dry ingredients into a bowl and then add 60ml oil/butter, mix well.
      Knead to a soft dough with milk.
    • Let the dough rest for few hours. The rising time depends on the temperature, when the temperature is warm it takes 2 hours to fully rise.
    • Punch the dough for a minute and mould it to a ball and using a rolling pin to flatten the dough so that it could fit in the baking pan.
    • Grease the baking pan and heat to smoking point, then turning the flame off.
    • Transfer the dough into the hot pan.
    • Bake the bread while placing a paper or a cotton cloth and then close the lid. The purpose of placing the paper or cloth is to avoid dripping the moisture, as the paper absorbs the moisture.
    • One side of bread takes 30 minutes to cook on low heat and it takes another 30 minutes for the other side to cook. To cook the second side just place a paper on the top, don’t cover the lid. It may take 10 minutes more then it took for me.

Fiti ka Chai

There are different ways of eating Hunza bread.

  • Break the fiti into small pieces in a cup or bowl, for more flavour add a tablespoon of fresh butter and pour Hunza tea over it.
  • Cut into slices and apply butter and snack on it.
