Vegetable fried rice

Vegetable fried rice  recipe is one of the common chinese recipe made in every Pakistani home. A single ingredient can change this recipe from a veg to non veg food  that is adding a fried egg or fried chicken to it. This recipe is best for introducing kids to a variety of vegetables those they love and those they don’t like. the key to this recipe is using prefect cold white rice and crunchy vegetables.  This recipe is made for two serving but you can always double the ingredients to make more than two servings.

Ingredients:

Red cabbage 1/4  of medium size head
Capsicum 1 small sized
Carrots 1 medium sized
Green onion 1
Green chilies 2
Garlic chopped 4 cloves
1 tsp lemon zest
Lemon juice 1 tbsp
Soya sauce 2 tbsp
Salt to taste
Cooking oil 2 tbsp
White rice 1 1/2 cup

Directions:

Into pan pour cooking oil then add the white part of the chopped green onion saute’ and add the aromatics, garlic. after a minute add the red cabbage and carrots. stir for a minute, add the capsicum and green chilies the add the salt. do not overcook the vegetables . At this point you can add vinegar/lemon juice and soya sauce but I experience the change in vegetable colors if sauces are added at this stage.

Add the cold white rice and now add the lemon juice and soya sauce and mix well. since we use cold rice, cover the lid and let the rice and the vegetable mixture on low heat for a minute or two and serve  as a whole meal. I always love to top it with more fresh greens.

For non Vegetarian  version:

Non Vegetarian fried rice has the same recipe with an extra step of Stir frying the meat, usually chicken bite size pieces at step one and then followed by the above mention Vegetarian version recipe or adding a fried egg at the end of the above recipe.
