Vegetable fried rice recipe

A vegetable fried rice recipe is one of the common Chinese recipes made in every Pakistani home and one of the best dishes to utilize leftover white rice.

You can make both vegetarian and non-veg versions of this with the same recipe but skip the meat or egg for the nonveg recipe.  This recipe is best for introducing kids to a variety of vegetables. The key to this recipe is using perfect cold white rice and fresh crunchy vegetables.  This Vegetable fried rice recipe is for two servings, but you can always double the ingredients to make more than two servings.

Vegetable fried rice recipe ingredients

Red cabbage              1/4  of medium size head
Capsicum                   1 small sized
Carrots                       1 medium-sized
Green onion              1
Green chilies             2
Garlic chopped         4 cloves
lemon zest                 1 tsp
Lemon juice              1 tbsp
Soya sauce                 2 tbsp
Salt                              per taste
Cooking oil                2 tbsp
White rice                  1 1/2 cup

Directions:

Add cooking oil to a pan and add only the white part of the green onion. saute the onions and then add the aromatics, garlic.

A minute later add the red cabbage and carrots. stir for a minute.

Add the capsicum and green chilies and then add salt per taste. Do not overdo with salt at this stage because we will also use soya sauce later. Also do not overcook the vegetables just stir fry them for a minute.

Add the boiled rice and add the lemon juice and soya sauce and mix well. If you are using the leftover cold rice, then cover the lid and let the rice and the vegetable mixture on low heat for a minute or two.

You can then serve it instantly. I always love to top it with more fresh greens.

For non-Vegetarian  version:

Non-Vegetarian fried rice recipe is different from vegan fried rice only because of a single step of adding or skipping any meat, usually, chicken bite-size pieces at step one and then followed by the above mention Vegetarian version recipe or adding a fried egg at the end of the above recipe.
