Suji Ki Kheer/Semolina Dessert
Suji ki kheer/semolina dessert is one of many other desserts made In Pakistan using sujii as main ingredients.sooji or semolina is used for making desserts like Suii ka halwa, which is made in two different ways, one methods gives a grainy texture halwa and other method results in a gooey halwa. There exist another dessert recipe called suji ki kheer and yet another sooji ki firni. The halwa is made using oil while kheer and firni is a no oil dessert made using milk. Suji ki kheer is made for babies as their first food by customizing the sugar and semolina quantity and skipping the dry fruits most of the times.In south India it is suji or semolina is used to make dishes like upma and Rava dosa and pani puri or gol gappa which are savoury dishes.It is sometimes used as alternative to corn meal to make crispy crust and is usually used to coat the fish or other meat before frying. suji comes in differnt types and only coarse semolina is used for making this kheer recipe.For two servings of kheer I have used the following ingredients.the ingredients can be doubled for 4 servings.
1 cup milk
¼ cardamom powder
1/3 cup sugar
2 tbsp. semolina
1 tbsp. almonds
1 tbsp. walnuts
Transfer the milk into a pan and turn on the flame and add the milk
Add the cardamom powder
Mix in the sugar along with semolina and mix well.
After adding the dry fruits of your choice or you can skip them, here I have used almonds and walnuts.
Suji ki kheer is traditionally served in clay bowl and is left aside for some time to rest before serving.
Kheer can be placed in the fridge, chilled and the served after dinner or lunch.
suji ki kheer/semolina dessert is considered the first babies first food and made for kids with customized ingredients but semolina and milk are major ingredients for both kids and elders.
