Quick and Easy Bhindi ki sabzi

We have abundance of fresh fruit and vegetables in summer season. The seasonal vegetables are great to try and I am going to cook the fresh ladyfinger also called okra and in Urdu we call it bhindi .This dish is one of the easiest to put together and takes around 20 minutes if you are really bad at cutting vegetables. but it can take even less when ingredients are ready. I have made this for two servings and used only few ingredients on hand but the spices can always be adjusted according to your taste. To make this delicious Quick and easy Bhindi ki sabzi where sabzi refers to the word vegetable, we need
Ingredients:
Okra 1/2 kg
Tomatoes
Onion
Chili powder
Green chilies
Turmeric
Salt
Cooking oil
Directions:
Cut both end of okra
Finely chop the tomatoes
Slice the onion
to a pan add 5 tablespoon of cooking oil and when it get warm enough add the sliced onions.When the onions turns golden brown add chopped tomatoes, chili powder,turmeric, salt and green chiles and mix well.
Keep the heat a low and cover the lid and let the mixture cook until the oil starts to separate.While the mixture is getting ready take another pan and add 2 tablespoon of cooking oil and toss the ladyfingers on high heat, when the color becomes dark green add the bhindi (okra) to the onion, tomatoes and spices mixture.
Mix both things together and keeping the heat to low, cover the lid and within ten minutes the Quick and Easy Bhindi ki sabzi is all ready to be enjoyed with roti/ naan .
