Salads are a healthy and nutrition packed meal if you are health conscious. Potato and green beans salad is one of my favorite and easy to put together. It is perfect for potato lover with crunch of some greens to it. Your can use your creativity and vary the ingredients and its seasonings that fits your taste.
I used 2 washed potatoes and a bowl of green beans.I cut potatoes into cubes and boil them in salted water till they soften and added beans for 5 minutes in the same water.I drained the water and let it cool down. Meanwhile i made the dressing.
1 garlic clove
3 tbsp of olive oil
1 tbsp of vinegar
1 tsp roasted sesame seeds
I finely chopped one garlic clove, added it to 3 tbsp of olive oil and 1 tbsp of vinegar. i assembled the boiled potatoes and greens beans in a bowl and poured the dressing to it. If you like the nutty flavor of roasted sesame seeds then add more of them on the top.The salad with Potato and green bean salad could be served warm or cold as a side dish or as whole meal. I have added fried beef too but it is optional.
