For two servings of bitter gourd you need
Bitter Gourd 1/2 kg
Onions 2 medium size
Salt Per taste
Red chilli powder 1/4 tsp
Turmeric 1/4 tsp
Tomatoes 1 Cup
Capsicum 1 medium size
Chopped parsley 1 tbsp
Take of the seeds of half kg of bitter gourd and wash them well.Cut bitter gourd into semi circles and fry them in 4 tbs of oil.
Slice 2 medium size onions and add to the fried bitter gourd and over the lid for a minute
After a minute open the lid,add salt to taste and mix karela(bitter gourd) and onion.
Cover the lid and let the onion cook and turn golden brown on medium flame
When onions turns golden brown add in your spices,here I’m adding a pinch of red chilli powder ,turmeric and tomatoes altogether.
Cover the lid and let it cook till the oil start separating.
When oil start to separate ,you can serve it right away with Naan or to reduce/balance the bitterness of bitter gourd add in a capsicum and let the cook together for a minute or two
Add in some chopped parsley/coriander/mint whatever on hand or skip this part .
Serve the cooked bitter gourd with yogurt to offset the bitter taste.
