Bitter Gourd Recipe

Bitter gourd also called bitter melon and karela is a unique vegetable-fruit that is a medicinal food. It is good for diabetes. Bitter gourds come in Dark green to light green color and consumed before turning yellow. Here I am sharing the bitter gourd recipe, karela recipe, or how to cook bitter gourd?

This will help you learn how to cook bitter gourd and how to reduce the bitterness of the bitter gourd. For two servings of bitter gourd, you need

Bitter Gourd Recipe Ingredients

Bitter Gourd             1/2 kg
Onions                       2 medium size
Salt                             Per taste
Red chili powder    1/4 tsp
Turmeric                  1/4 tsp
Tomatoes                 1 Cup
Capsicum                 1 medium size
Chopped parsley     1 tbsp

Directions:

Take the seeds of half kg of bitter gourd and wash them well. Cut bitter gourd into semi-circles and fry them in 4 tablespoons of oil.

Slice 2 medium size onions and add to the fried bitter gourd and over the lid for a minute.

After a minute open the lid, add salt to taste, and mix karela(bitter gourd) and onion.

Cover the lid and let the onion cook and turn golden brown on medium flame.

When onions turn golden brown then add in your spices. I have added a pinch of red chili powder, turmeric, and tomatoes.

Cover the lid and let it cook till the oil starts separating.

When oil starts to separate, you can serve it right away with Naan. You can reduce/balance the bitterness of bitter gourd adding in capsicum and let them cook together for a minute or two.

Add in some chopped parsley/coriander/mint whatever on hand or skip this part.

Serving

We serve the cooked bitter gourd with roti and yogurt to reduce the bitter taste. In Pakistan, this recipe is generally known as karela sabzi or karela curry.

There is another popular recipe for a bitter gourd that is stuffed bitter gourd. For the stuffed bitter gourds, we cut the gourds in half, remove the seeds and then stuff the gourds with the spices and then fry them. It is served with naan, chapati, roti.
